Foam bananas are well-known and loved artificially flavoured sweets, yet, they don’t quite taste like their fresh counterparts. But why? Well, the legend goes that foam banana’s distinct taste was developed from an old variety of banana commonly known as the Gros Michel. Or, that was until a fungus called the “panama disease” wiped them from shop shelves in the 20th century. With the popular Gros Michels gone, producers began to develop a new variation of banana known today as the Cavendish. Whilst consumer’s love was satisfied, there was a slight deviation in flavour from the foam bananas and new Cavendish bananas, but that doesn’t make them any less resistible.
